Chilli Chicken Recipe

Chilli Chicken is a popular South Indian recipe.The dish is very spicy and yummy....It can be served with plain rice/fried rice or chappati/porotta.


Recipe

Ingredients


1.Chicken cut into cubes-1 lb


2. white or yellow onion-1 no: cut into wedges


3.Red and green bell pepper-2 nos each


4.Chicken/Veg Boulllion-1/2 a cube (Knorr Chicken Bouillon Cubes)




5.Soy sauce-4 tblsp


6.Chilli sauce-2 tblsp(or as u prefer)



7.Tomato sauce-3 tblsp.


8.Cornstarch-2 tblsp


9.Corn Flour-4 tblsp


10.Egg-1no


11.Salt-as reqd


12.Chilli powder-3 tsp(having good red color)


13.Oil for deep frying..


14.Celery-1 to 2 stems(i luv to use more of it-ur choice)


15.Use Spring onions/Cilantro to decorate..


16.Ginger and Garlic chopped-3 tsp each.




Method


1.In a bowl mix together corn flour,egg,chilli powder,1 tblsp soy sauce.


2.Cut and clean the chicken in salt water/curd.


3.Marinate the chicken with the mixture in step 1.


4.Deep fry the chicken pieces until they are golden brown.


5.Take another pan,pour 2-3 tblsp of oil from the oil used for frying gopi.


6.Saute ginger and garlic for 5 mins.


7.Then put Onions,bell pepper and celery.Saute for 6 mins.


8.Pour 4 tblsp of water and put the veg/chicken boullion to it.Mix well.


9.Then add all the 3 sauces to it..Mix well.


10.Add the fried chicken pieces to it.Combine.


11.Mix cornstarch in 4tblsp water and pour into the chicken mixture.Combine well.


12.Adjust the gravy to ur choice..(Heat more time for less gravy).


Serve Hot!!!!

Vazhakka uppu curry/Raw plaintain thoran



Recipe

U need
1.Raw plaintain(banana)-2 nos(medium sized)
2.Shallots-5 nos sliced
3.Green chillies slit-3 nos
4.Greated coconut-1/4 cup
5.Crushed red chillies-2 tsp
6.Salt to taste
7.Water-Just enough to cook banana.
8.Coconut oil-2 tblsp

How to make Vazhakka uppu curry/Raw plaintain thoran

1.Cut plaintains lengthwise into thin 1 inch pieces..
2.Cook together plaintain pieces,shallots,salt,red chillies,grated coconut,green chillies and enough water ans salt to cook it...
3.Cook it covered till the pieces r tender.
4.Finally switch off the flame and pour the coconut oil on top..
Serve with rice..




Achinga Payar/String beans Mezhukkuvaratty




U need

Achinga Payar/String beans -1lb cut lengthwise 1 inch pieces
shallots sliced -4 nos
Chopped garlic -1 tsp
whole dried red chillies chopped -3 nos
Turmeric Powder – 1/4 tsp
Curry Leaves -a few
mustard seeds-1 tsp
Salt – to taste
Oil – as needed
Coconut Cuts-1/4 cup

How to make

1.Cook payar/beans with enough water,1 tsp salt and 1 tsp turmeric(till its tender).
2.Heat oil in a pan splutter mustard seeds,and add onions,chillies,coconut cuts and curry leaves into it.
3.Saute for 5 minutes and add garlic.Saute for 2 more mins.Finally add the cooked beans.
4.Stir well and switch off the heat when all water goes off and dish is almost dry.
5.Serve with rice.

Sweet Mango Pachadi/Pazha Manga Pachadi/Sweet Mango Salad/Raita

Recipe
Ripe Mango/Sweet Mango/Pazha Manga-1 no chopped
Yogurt-1 cup
Onion chopped-1/2 cup
Ginger paste-2 tsp
Dried Red chilli
Mustard Seeds-1tsp
Green chillies slit-3 nos
Curry Leaves-4 leaves
Coconut oil-1 tblsp

How to make Sweet Mango Pachadi/Pazha Manga Pachadi
Splutter mustard seeds in oil.
Saute onion,ginger,both chillies and curry leaves in oil for 5 mins in medium heat.
Then add in the chopped mango pieces.Saute for 2 mins.Add salt to taste.
.
Switch off heat.
Fold in yogurt and mix well w/o the mango pieces breaking up.
Serve with rice..

Recipe


1.Coconut grated-2 cups
2.Mango-1 no(with good sourness preffered)
3.Ginger chopped-4 tsp
3.Curry Leaves-1 stem
4.Green chilli-5 nos(may vary)
5.Coconut oil-1 tp
6.Shallots-4 nos
7.Mustard seeds-1 tsp
8.Coconut oil-1 tsp

How to make Coconut Mango Chutney
Grind together 1 to 6 ingredients in a mixer w/o adding water.
Splutter some mustard seeds and put some curry leaves...Add this seasoning to the chutney mixture..Serve with rice..

Coconut Tamarind Chutney Powder/Thenga Chammandi podi


Recipe
1.Coconut grated-1 cup
2.Tamarind-1/4 th cup(seedless)(adjust to ur taste)
3.Ginger chopped-3 tsp
3.Curry Leaves-1 stem
4.Dried whole Red chilli-5 to 7 nos(may vary)
5.Coconut oil-1 tblsp
6.Shallots-4 nos

How to make Coconut Tamarind Chutney Powder
First heat oil in a pan,fry coconut till its golden brown..Similarly heat red chillies,curry leaves and all the ingredients to remove all moisture..
Then grind together all the items..
Serve with rice...

4.Dried whole Red chilli-5 to 7 nos(may vary)
5.Coconut oil-1 tblsp

How to make Coconut Tamarind Chutney
First heat oil in a pan,saute coconut,red chilli,curry leaves and sliced shallots,ginger for 2 mins..(remove moisture)(This step can be avoided)..
Then grind together all the items w/o adding water..
Serve with rice...

Carrot Mango Pickle recipe kerala style





Recipe
1.Green Mango-medium size 1 no(having good sourness) cut lengthwise 1inch pieces
2.Carrot -2 nos cut lengthwise 1 inch pieces
3.Ginger 1 inch piece -cut lengthwise
4.Garlic-5 pods cut lengthwise 1 inch pieces
5.Mustard seeds
6.Curry leaves
7.Gingelly oil-4 tblsp
8.Green chilli cut lengthwise-4 nos
9.Vinegar-3 tblsp
10.Asafoetida- 1/4 tsp
11.Fenugreek powder - 1/2 tsp
12.Turmeric powder - 1/4 tsp
13.Salt to taste.

How to make Mango Carrot Pickle

Splutter mustard seeds in oil,followed by sauting ginger,garlic,green chillies for 5 mins..Then put the carrots..Then add all the powders.Finally mix in the mango pieces..
Switch off the flame once mango is added.
Bottle with vinegar..

8.Pour 4 tblsp of water and put the veg stock to it.Mix well.


9.Then add all the 3 sauces and chilli powder(optional) to it..Mix well.


10.Add the fried paneer pieces to it.Combine.


11.Mix cornstarch in 4tblsp water and pour into the mixture.Combine well.


12.Adjust the gravy to ur choice..(Heat more time for less gravy).


Serve Hot!!!!

1.Heavy whipping cream-1 cup
2.Sweetened condensed milk-1/4 th cup
3.Vanilla essence-1 tsp

How to make Home made ice cream w/o ice cream maker
1.Mix all the ingredients together in a mixing bowl with hand mixer till the whipping cream forms(fluffy).

Kerala Coconut Oil for deep frying Quail-1 cup
cilantros-1/2 cup..

How to make Quail Roast/Kada Kozhi Roast
1.Clean Quail pieces with curd and turmeric.
2.Marinate Quail pieces with 2 tsp lemon juice,1 tsp salt ,2 tsp chilli powder,1 tsp turmeric pow and 1 tsp pepper powder.
Keep in freezer for 15 mins till all the marination gets absorbed into it..
4.Deep fry the Quail pieces in oil till its bit crispy...
5.Take a frying non stick pan,pour some oil ,saute well ginger and garlic till its brown..
6.Then put the chopped onions and saute well till its brown..
7.Then add the sliced tomatoes and saute for 5 mins..Add curry leaves too..
8.Put rest of chilly ,turmeric,pepper and gharam masala powders...(The quantities u can change acc to ur taste)..(check the taste of gravy in btw) .Sprinkle rest of lemon juice..Mix well..
9.Pour tomato sauce to this mixture so that the gravy is thick,then put fried Quail pieces.... Put sme cilantros..
10.Mix well and serve after decorating with fresh cilantros..

How to make Disney Princess Cake

Part 1
1.Bake a rectangular shaped cake to form the base part..
Refer
2.Bake the second cake in a curved baking pan(i used a pyrex bowl having skirt shape).
3.When baking is over,take cake out of the pan and let it sit in room temp for 30 mins to cool completely..
4.Turn both the cakes upside down,and apply frosting..
5.Apply cream on entire cake..
6.Cover the first cake with pink colored rolled fondant.(Mix pink color to the fondant and roll into shape of cake to cover the entire surface fo the rectangle cake)
7.Make some pink and white stars of different size using cookie cutter and paste on the fondant surface.
8.For the second cake(skirt shaped),insert doll pick in the middle..Then frost completely...
9.Make a beautiful skirt for ur cute princess..Apply all ur creativity...Sprinkle some pink sugar on skirt..

Kothu Porotta/Chilli Porotta Recipe South Indian Recipe


Ingredients:

4 Porattas
4 tsp Chilli powder
3 tsp Gharam Masala Powder
1 tsp Coriander powder
4 Green Chillies (chopped)
2 Onion (chopped)
Coriander Leaves-1 cup
1 Tomato chopped
3 tsp Oil
•Salt to taste



How to make Kothu Porotta/Chilli Porotta :
• Chop porottas into small pieces.
• Heat oil in a pan and fry onions ,green chillies followed by tomotoes.
• Then add all powders and salt in low heat(dont burn).
• Mix with the porotta pieces.
• Serve hot with coriander leaves.

Red Snaper/kilimeen thoran OR Kerala Fish Thoran recipe


Ingredients
Red Snapper/Kilimeen (small pieces) -½ kg
Shallots -4 nos sliced
Ginger paste 1 tblsp
Kodampuli/Ghamboge -3 pieces(Good quality)
Garlic paste 3 tsp
Green chillies 4 nos chopped
Grated coconut 3 cups
Salt -2 tsp
Coconut Oil -2 tblsp
Curry leaves -4 sprigs
Water 1 to 1 1/2 cups
Turmeric-3 tsp
Mustard seeds-1 tsp
Dried whole red chilli(optional)-2 nos

How to make Red Snaper/kilimeen thoran OR Kerala Fish Thoran

1.Soak kodampuli in 1 cup warm water and set aside for for 3 to 5 minutes

2.Clean fish neatly and cut into 1 cm cubes.Wash again with gambhoge water/kudampuli..

3.Grind together ginger,garlic,shallots,grated coconut and turmeric together.

4.In a clay pot,splutter mustard seeds in coconut oil,followed by curry leaves and dried chilli..
5.Mix the coarsely ground coconut and green chillies with fish and kodampuli taken out of the water and add to clay pot .
6.Pour 1 cup water to the fish mixture.
7.Bring to boil rapidly. Cook for 20 minutes till all the water goes off.Take off the fire when the water dries up completely.

8.Serve with rice..

Dates Cake Easy Recipe

Ingredients
1.Maida/all purpose flour-1 cup
2.Chopped dates-1 cup
3.Butter-1/4th cup
4.Eggs-2 nos
5.Sugar-3/4 th cup
6.Vanilla essence-2 tsp
7.Baking soda-1 tsp
8.Water-3/4 cup
How to make Dates Cake
1.Sift the flour for any lumps and combine with baking soda..Mix well.Set aside
2.Boil dates in water and sugar till it is soft.
3.Beat butter and sugar with hand mixer till its fluffy.
4.Fold in eggs to the butter and beat well.
5.Add the vanilla essence to the egg butter mixture.
6.Fold in the flour mixture and beat well..
7.Pour in the dates and water to the abve mixture...Just fold in..
8.Pre heat the oven to 350F for 15 mins..
9..Bake for 45 mins at 350F..Check wen its is 30 mins using a tooth pick..

Prawns noodles-Chinese easy recipe



Recipe
1. Fresh Prawns-1/2 lb
2.Vegetables-Brocolli,carrots,beans,cabbage cut lengthwise .
3.Plain Noodles-Chinese 1 small pkt
4.Chopped Garlic and ginger -2 tsp each
5.Vegetable Bouillion(knorr)/Vegetable Stock-1 cube
6.Chilli sauce chinese-3 tsp
7.Sliced bell pepper-2 nos
8.Soy Sauce-3-4 tbsp
9.Spring Onions sliced-1 cup
10.Sesame oil- 1 tsp

How to make prawns noodles
1.Heat oil in a non stick pan,saute garlic ,ginger and bell pepper for 1 min,then add in the fresh prawns and 1 tsp salt.Saute it until prawns is almost fried... Then keep aside.
2.In the same pan add some oil,then saute carrots for a while and cover with tight lid for 2 mins.
3.Add beans,brocolli , cabbage and saute for a while and cover it for 2 more mins.
4.Add soy sauce(dark) and mix well.Add chilli sauce .Add some water nd cook for 2 mins.
5.Remove the vegetables and set aside.Add the vegetable boullion to the left over water .
7.Put the noodles into the water and cook.
6.After the noodles is cooked combine with the cooked vegetables .
7.Add spring onions and saute well. Pour sesame oil on top and mix well.
8.Saute till dry and serve hot...

Plum Cake/Fruit cake is one of the fav cakes during Christmas time..Its made in bulk in bakeries during the festival season...

I have been searching for this recipe and got it recently ...But there is a slight variation made on the original recipe by adding some of my favs dried fruits than the usual ones.

Cherries

Blueberries.

U need

Prawns-1/2kg

Tender mango-cut into small cubes-1/2 cup

red chilli powder-3 tsp

Coriander powder-2 tsp

Yogurt-1/2 cup

Thick Coconut milk-1/2 cup

Cumin seeds-2 tsp

turmeric-1/2 tsp

green chillies-4

curry leaves -3 stems

grated coconut-1/2 cup.

ginger garlic paste-1 tblsp.

dried red chillies-2-3 nos.

mustard seeds-1 tsp

Salt to taste

Coconut Oil-1 tablespoon.

Earthenware Pot.


How to make Prawns Buttermilk curry/Chemmeen moru curry...

..1.Clean prawns well using curd and turmeric.

2.Marinate prawns with a little salt, chilly powder, ginger garlic paste.

Refrigerate for 1 hour.

3.Take an earthenware pot,cook the prawns with tender mangoes, little salt, turmeric,yogurt and 1/4 cup water.Wait till all water goes off and gravy is almost thick..

4.Make a fine paste out of grated coconut,green chillies,cumin seeds and thick coconut milk...

5.Add this paste to cooked prawns.Mix well for 2 mins in low heat.

6.Then for seasoning,splutter some mustard seeds in oil,followed by curry leaves, coriander powder and dried red chilly...Check salt and sourness...Add salt if needed...U can adjust the sournessby adding little curd/gamboge.(optional).

7.Serve hot.Njoy:)
